Sweet potato finger food
by Christine918I haven’t been making new vegetable purees since Sophie is almost a year old (only 2 more weeks, I can’t believe it!). We don’t always have leftovers from dinner for her, though, so I’ve been scrambling to pack lunches for her at the babysitter’s house. I’ve been looking for ideas online, though, and found this recipe from NurtureBaby for sweet potato bites. Sophie loves sweet potatoes, so I got two nice-looking ones last night and tried it today.
First I peeled the sweet potatoes
and cut off the ends. I was not prepared for how much harder a raw sweet potato is than a white potato! I sliced them, and cut each slice into chunks, about half an inch each.
I put them into a bowl and coated the pieces with olive oil.
Then, I spread them on a baking sheet and sprinkled with cinnamon.
They baked at 400 degrees for 25 minutes and came out looking delicious! 
When they are cool, I will freeze them for later. Although, I think I’ll save some for her to taste-test after her nap.
